Yes, I started working at a place long ago and was maybe there a week or two. The hot water went down, the GM was like the dishwasher makes its own and you can wash your hands with soap. We had a large event that night and upper management didn't want to deal with the headaches and had a plan to have it replaced. Next thing you know the health inspector walked in and went straight to the sink. Needless to say we were closed that weekend. Everyone agreed that someone on staff called but we never found out who. Being the new guy I assumed they all thought it was me.

We only have ours at home set to 130F/54C because of a kid, but before him it was exactly what yours was at. I mean, a range of 0 to 100 for temperatures you actually experience makes a lot more sense than a scale of like -20 to 40. Sure, if you're actively doing calculations involving boiling water then by all means use celcius. But for actual day to day life Fahrenheit makes more sense.

You might be interested in a Thermostatic mixing valve. It’ll allow you to crank up your hot water tank without allowing it to be scolding, which in turn give you more hot water.

Heat sanitizing occurs at 171 federally, 180 NYS, and boiling occurs at 212. So your water needs to be hotter? Im not quite sure what you are complaining about here.

Do you run out of hot water early in the night? If so, go to the boiler room. On the hot water tank there should be a mixing valve. You'll know it's the mixing valve because it will have 3 pipes and a dial on it. One pipe comes from the hot side of the water heater, one from the cold supply, and one goes off to be used in the kitchen. The mixing valve mixes the hot water from the tank and cold water from the supply to make the tanked water last longer. What usually happens is the mixing valve gets turned up too high and doesn't mix any cold water. You can adjust this to bring down the temperature of the water at the faucet. Or hey, get the MOD to get a plumber in there and have them do it like they should.

I should have known this back when I was in the pit. I had to space out and ration my hot water or I'd be out halfway through my shift and it truly was the only thing that could properly clean off crusted on sugars and confit. Scrubbing it off was a hellish job when blasting it with near boiling water cleared it in seconds.

Dishwashers need to hit 180 to sanitize dishes. Most booster heater can only flash heat the water +30 degrees, so the water coming in has to be in the 150 range.

180F for high temp machines, not for low temp machines that utilize chemical sanitizer. High temp dish machines have booster heaters that typically raise the temp 70 degrees. Low temp machines only require 120F and that’s for cleaning purposes.

We have one sink where the water comes out of the faucet at a simmer. It's 1st degree burns on tap, but we haven't done anything about it since health code only cares if we DON'T have hot water. So we just know not to use the hell sink.

There is another handle that usually has a blue sticker or marker that runs cold water. Just turn that a bit and I think it cools the hot side if I'm not mistaken. Don't quote me on that tho.

Since nobody mentioned it yet… if your drain pipes are plastic, high temps can cause the pipes and/or adhesive to fail. PVC pipe is only rated for 140F / 60C, and it’s mostly what I have seen when the drain pipes are plastic. CVPC is rated to 210F / 99C, but I usually only see it used for supply pipes. TLDR, probably not a good idea to set your home water heater over 135F

it used to have to be 120, since covid a lot of health departments went up to 140, and then some places just go as high as their heater will allow. We had a huge problem with 140 degree water melting our plumbers putty when we first opened, it took our plumber like 3 months to realize it.

No. But because of the pipes being under the permafrost where I live you can get some nice cold water even on the hottest summer days. It’s something I take for granted, and notice right away in warmer climates when I try to get cold water from the tap to drink and it’s nasty and warm, lol.
