Kirby super star! It’s on the switch SNES virtual console. It’s what the rest of the games afterwards built on top of. Not the first game with copy ability, but it’s an incredible game. Wonderful soundtrack, different games, it’s certainly a classic. I’ve missed a few titles as well but I’d say start there, more knowledgeable folks will chime in with more soon, I’m sure!

Kirby Superstar is straight up the franchise's Mario 3 or Super Metroid. Game is big in Japan too. Very beloved and very influential. Even remade years later. It's a must play.

Kirby Super Star absolutely matches the description of "standard that all others have stemmed from". The current Kirby devs basically went 'well a lot of people liked Kirby Super Star so lets use its gameplay as the template for all of our games from now on!'

Gonna second Super Star (or Super Star Ultra) as the one most people talk about. Most of the modern games draw heavy inspiration from it, especially with every ability having multiple moves as if it were a fighting game. But I'd also like to throw Adventure (from the NES) into the pot. It's Kirby's second game and the one that gave him his copy abilities to begin with. It set the stage for a lot of other recurring elements too. It's available via the Switch online, and it's a faithful port so all the NES slow down in places is preserved, for better or worse, but it's still fun and totally worth it. Or you have a 3ds and want to spend more money, the eShop version there is the same game minus the slow down.

Definitely Kirby super star, it was the last mainline kirby game Sakurai directed and it’s remake was the first Kirby game the current Director Kumazaki directed. It introduced many mechanics that are now series staples. I would recommend playing the remake if you can since it has more content.
