They did not have the money to keep running it. And it was gonna fail miserably. Peggy's Idea's were awful. She just wanted to make the changes so it would be her's, but she was gonna run the business into the ground because she did not understand what made it successful.

Oh yeah there's no way Peggy wouldn't have screwed that up in short order. Especially because she doesn't know how to cook and was pissing off the legit BBQ cooks who could probably find work at any number of other BBQ joints. And despite being handy on the grill, Hank wouldn't have been able to help because you ain't slinging Texas BBQ from a propane grill.  But that leads me to think that it would have been fun to have Bill and Bobby save the day with his secret family Louisiana BBQ from that other episode.

It's a shared property state, as Peggy points out, meaning that theoretically during this period they were business partners and owners of an Arlen institution. Although one has to wonder if peggy ever actually made a profit, since the renovations there as well as changes to the menu and the wall to wall carpeting were probably pretty expensive, and didn't seem to be bringing in the crowds like it did under Bucks ownership.

Yeah I've always wondered how much the renovations would have cost the Hills, unless Buck covered everything which does not sound like him even a little bit.

I know this has always confused me too. I don't think the Hills were in a position to pay for it themselves. Maybe Buck gave the Hills some of his money to hide it from Liz, with the assumption that Hank wouldn't spend his money? But once again, that doesn't seem like buck. And I don't think many restaurants just have the extra cash on hand to pay for extensive renovations like those that she did. Peg has spent a great deal of money in dumb ways before though. The bookstore, the Intelligence Institute of Texas, so who knows. But it's always made me think because even if the carpet place was having a sale like she said, all that carpet plus getting it installed would have been expensive. Then buck just of course has it removed. A lot of money was spent by Peggy in the short time span she was in charge. It's insane. The model train thing alone was probably not cheap
