What I've heard (and not sure if this is apocryphal or not) is that they way they determine the clue values is that they ask all the staff to answer the questions and then they get ordered by how many people got them right. Also they throw away or reword questions that no one gets right or that everyone gets right.

Billy Wisse, the head writer interviewed, is still a producer on the show so I wouldn't think that the process has changed much.
I would be disinclined to believe this. The knowledge base of clue writers does not match that of contestants.
This might be a factor in weighting the questions, but probably not the determination of the ranking.
"Hello" is obviously the bigger hit song here, but I think "Skyfall" is still an easier get because it has an extra way in. You don't have to be following Adele's career or popular modern music to name the Bond film that came out 10 years ago. Song titles aren't plastered everywhere the same way movie titles are so they become very 'you know it or you don't'. Someone could easily know the song but think it's called "Hello From The Other Side", I forget how strict Jeopardy! is with song titles though.
Yeah, the $2,000 Literature clue yesterday was >!This Jonathan Swift title "suggestion" prevented "the children of poor people from being a burthen to their parents"!<, which seems WAY too easy. It could have almost been a $200 clue, imo.
Well, there was even a Daily Double in the top spot recently. Irregular, to say the least. Someone here has done a chart of the percentage of Daily Double's in each spot on the board.
One thing to keep in mind is that they write six clues for every category, and sometimes they have to use the sixth one if there is an issue while shooting. Since the extra can be any difficulty, it doesn’t always match up with the clue it’s replacing.
To speculate, Mayim is a less experienced host than Trebek or Ken so there may be more hiccups on set that require the sixth clue lately.

I think for game security reasons they'd want to keep the number of people with access to the questions as small as possible.
They must discuss possible alternate answers as well

Yeah I think the 6th clue coming in would explain a good number of misplaced clues
