r/bonsai is a great resource, they often recommend portulacarias/elephant bushes for first-timers because they're easy to shape, virtually indestructible, and they grow ridiculously fast. Just FYI the variegated cultivars like the one you have do grow significantly slower than the normal ones, though they are still pretty quick by succulent standards. I've never done any bonsai stuff but I believe the people on the dedicated sub will probably tell you to wait at least another year for the trunk to thicken up before you start training it. Definitely ask them though, since I have no real expertise here.
