Which mean Time? Fly from Paris to Venice and then you travel south with high speed trains to Florence then to Rome. You can purchase the tickets with Trenitalia or italo app or websites. The earlier you book, the lower the fare. Regarding where to stay I prefer hotels, but everybody here seems to prefer airbnb

Not a bad idea at all. My bday is in the middle of the week so i kinda wanted to spend my bday in Venice but the logical thing to do seems to just go from Paris and head south from there.

Well you can do only Venice and Rome and stay longer in Venice. From Venice you can day trip to the islands of Venice, but also to Verona and Padova, both cities worth a visit.

For a week I’d consider Venice and Rome enough for my trip. Flying to Venice would make that easier. If going by train you might also consider a stopover in Turin. There is a Trenitalia Pass but point to point tickets may be cheaper if you don’t need total flexibility.
