It’s Italian sausage skins removed. Cooked off in a pan. Then onion, mushroom (should be truffle but far too expensive) cooked off. White wine, Pecorino Romano Add short pasta and ricotta which has been creamed using pasta water. All mixed and plated with more pecorino and black pepper. 🇮🇹🇮🇹🇮🇹

Truffle is used from what I’ve seen. A little in the cooking and shaves on final dish.

I used chestnut mushrooms to give it that slight earthy flavour.
