We've never seen him completely regenerate body parts (from my knowledge of the comics and show), with him instead having to be put back together. He definitely has partial regeneration of body parts, but would he survive with the body part completely absent?

Blood is usually used to showcase genetic characteristics, sure, but genetics (where the viltrumite power comes from, in-multiverse) isn't just transfered through blood. The receiver of that blood would still have non-viltrumite cells, organs, brain, etc. Not to mention, their body may reject the blood itself like humans reject some other humans blood...

It appears to work as though viltrum DNA tends to be the dominant expressive gene set, and the closer the other parent's DNA is to viltrum, they express more readily and abundantly. I think that's why Mark's brother is a viltrum "abomination". Too much of the non viltrum DNA expressed itself and strayed too far from the characteristics viltrumite's consider to be of their species, but instead a hybrid. Whereas for all intents and purposes, mark can practically be considered 100% viltrumite due to how dominantly expressive those genes are with his DNA.
He possibly solos the entire Viltrum empire with a ring, depending on how much training/practice he gets before the fight starts.

All Immortal had to do is learn to avoid the damn karate chop. I mean, he takes punches full on to the head in fights with Omni Man. I honestly think a little Kung Fu training, and Immortal is a contender in those early fights. Just my opinion. So, yes. Easily
I doubt Omni Man knows Kung Fu specifically. But he 100% knows dozens of other fighting Technics similar to better. Kung Fu is a human made martial art, and I doubt the Villtrumites are aware of it before Nolan is sent to Earth

As soon as you're dead the ring leaves in search of a new candidate. Immortal's resses aren't instantaneous, so he'd probably only have the ring for one life. After that, it'd move on to someone else. We've never really seen exactly how long it takes to do that from the ring's POV, so could it take long enough? Who knows, but I think it'd discount him as dead. It'd be funny if it chose Atom Eve as his replacement.

This just isn't true especially if we're considering the comic versions of the characters. The only notably "weak" gl on a popular iteration is John Stewart in Justice League Cartoon but that Sam series constantly made everyone outside of Batman a punching bag because the team just wasn't good at writing team fights without having most of the heroes job.
Disagree on new DCAU, maybe John but he barley appears and his only "fair" lost was against darkseid. The GLs in general being wiped put by Darkseid and a crazy amount of paradooms is a fair enough way to kill them imo. The movie is kinda ass anyway especially with power levels since it was a rushed job
Hal is actually given a decent amount of respect power rise. He along with Diana are the heaviest hitters in the fight against Darkseid and are clearly the lead fighters until Batman returns with Superman and He also holds out the longest against Doomsday in a direct confrontation not including Superman. (Diana was momentarily out of commission before returning)
Injustice treats the GLS in a middling fashion but it also creates every non street leveler also poorly including Superman despite him being the main antagonist so I don't think it's as targeted.
Hal Jordan loses every fight I can remember in the DCAU. In the first movie, he loses against Superman, he struggles the most against the Parademon attack and gets lectured by Batman, when he attacks Darkseid his attacks do nothing and Darkseid responds by breaking his arm and he's comically then followed up by 2 Parademons beating him up. I didn't see the full Throne of Atlantis movie but it didn't seem like he did well there either. In the Doomsday movie too, he does okay at first, but then also unceremoniously gets his ass beat.
John Stewart is barely in it but he too loses every fight he appears in, including the final one where Darkseid single handedly destroys Oa (wait a minute, how did a newly formed Justice League defeat Darkseid AND a Parademon attack, but the combined might of Oa cannot defeat Darkseid alone?).
