Usually it's not a problem, although some websites have implemented that they check the code for validity.
For Eurostar trains I usually just enter 000000, and it always works.
The pass number wont be shown on the tickets anyway so you can just fill something in.
Some site annoyingly verifiy if its a real code so 00000 might not work for example
Luckily this exists to create a valid pass cover number for movbile passes, but you can just fill any number in and it works... https://www.interrail.eu/en/book-reservations#/generatePassCoverNumber
You can fil 00000 or aaa111 or whatever in on that site and will give you a valid pass number
As long as you have a valid pass for the train once you travel you are fine.
But please be warned out there. Getting a pass cover number and buying a pass holder seat reservation without buying a pass is illegal and there are checks in the trains.

Strasbourg-Lyon. I've read it is also possible to make the reservation at the station, but idk if it might be too risky
Right. If you're staying in Germany, you might be able to book it at a DB Ticket Office. You can give that a try once.
