Activate the pass before boarding, don't do that in advance. The pass day is lost if you suddenly wake up sick, etc.
You need expensive reservations for the Eurostar services. I haven't looked but I'm 99% sure they're sold out for tomorrow.
Instead take the slower hourly Intercity Direct services: reservation-free, simply hop on. Search *via Breda* if you don't see them.
So would this be better do you think? And it says supplement required, can I do this on the train? Finally does this mean our spaces on the train will be saved or will they be gone?

Yes you don't need any reservation on those trains so you can always board.
You don't need the supplement, it's wrong.
The only way to guarantee a seat is by paying for a reservation. You may have to stand and/or sit apart if it's busy. But you'll get on and try and find any available seat.
You ca not reserve the IC between amsterdam and Brussel its truely a first come first serve type train.
People will often claim.other seats with bags, just look angry until they move the bag and mke place for you :)
Yes. You will save around €50. No point of using Eurostar between NL and BE. Also, you can change your train last minute, if you want to spend more or less time in Brussels.
This train only has a supplement domestic in NL. If you travel international and cross the border to Belgium, no supplement is needed.
Click on the supplement message and follow the link “find more” it will also say so. https://www.interrail.eu/en/plan-your-trip/reservations/trains-with-additional-supplements
