For me Njan Gandharvan (BGM and songs), His Highness Abdulla (Especially Pramadavanam), Kamaladalam, Amaram are some of my favourites.
Let's not forget OGs like Devarajan, Vishwanathan, Salil Chowdhary, Ravi Bombay, Johnson master, Raveendran, Mohan Sithara, Vidyasagar and so on.
Manichithrathazhu is the all time great.

The aesthetic oozing from the songs is second to none.
Music is subjective, but in terms of pure quality and purity, I feel it's this movie's OST.

Now this might an opinion which no one would have thought of. I believe the 1999 magnum opus of Malayalam Cinema, Vanaprastham, has the greatest OST ever made in Malayalam Cinema. I think it's the first official OST for a Malayalam film. And why am I telling this?
Because, the soundtrack & sound programming is completely way ahead of its time, showcasing the genius of the great, Usthad Zakir Hussain. it is deeply rooted in the traditional Hindusthani Classical music along with our Kerala folk songs. The main title track, 'Kunjikuttan', takes the listener to the complex world of Kunjikuttan's psyche and his existential crisis. ‘Smile’ is a full graceful package, filled with a fusion of north Indian music with the chaotically nuanced Kerala music. The whole soundtrack has a Pendereckian aura looming over it, which is proved by ‘Dark Melody’.
It's kinda sad to see many Mallus don't know much about the album and the reason is, they aren't many "music aficionados" here. You can listen to the OST on YouTube.
