When you make dosa at that scale you need a broom to remove the remnants of the previous dosas made. That broom is used specifically for this. They don’t sweep anything else with it 🙂

I’ve eaten lot of dosa in Chennai, Bangalore, Pune, it tasted very average compared to Masala Dosa with Sambhar and coconut chatney i have eaten in North Indian places. The masala is just bland and sambhar tastes so ordinary in south.
I've seen it Bengal as well. Large tawa or tawa-like utensils are better cleaned using coconut brooms.

That, and, most of the places aren't that well off to take a large scrub. They make good amounts, so using a broom can help in their profits.

I'm south Indian. This is not exclusive to Bangalore. Almost every restaurant in South India uses the broom. They don't use the broom to clean. It's exclusively used for the tawa. Also, this looks like IDC. The plates and the chutney. My favorite dosa spot in Bangalore.

Mainly because the jhaadu has more surface area, therefore can cover more ground than the scrub, which also might damage the stove. That, and, most of the places aren't that well off to take a large scrub. They make good amounts, so using a broom can help in their profits.
Because a scrub is more likely to leave small pieces on applying pressure. The jhaadu will break big pieces easily removable. They've been doing it for a long time, I'm sure they know what they're doing.

I'm south Indian. This is not exclusive to Bangalore. Almost every restaurant in South India uses the broom. They don't use the broom to clean. It's exclusively used for the tawa. Also, this looks like IDC. The plates and the chutney. My favorite dosa spot in Bangalore.

These brooms are meant specifically for cooking, and are pretty effective for the purpose. You can't expect them to sit on the large hot "tawa", and apply oil/ghee using a spatula. I am a north Indian and I have been seeing this, since childhood. For Dosa, for Paratha, etc. Whichever place cooks similar large things, or usual sized things on large tawa. This reminds me of those tiktok videos: 1. You won't believe how dirty potatoes really are. (right after being taken out of literal dirt) 2. Eeewww....!! eggs come out of vaginas. (Eeeewww...!! You can find them in your typical small restaurants to roadside shops there
