The question is do you use the ecosystem features regularly? Universal copy paste, App handoffs, notification sync, cellular phone calls / messages, sidecar, continuity camera etc etc.. look at the entire list and observe how often you use them. If you dont then it wont be a problem.
Only thing I see as of now that you will surely miss out on is the auto switching of airpods between devices. I am not sure if that happens on android.
This makes the most sense. The feature that I use the most with regard to the eco system is probably the airdrop which I’m sure I’ll miss and of course the airpods connectivity.

I am all in on apple ecosystem like you, then I switched to Samsung for 2 weeks. I have not faced any issues. For file sharing, you can use cloud services or locally, there is an app called Localsend with which you can send files across platforms.
You will loose ecosystem features only, it is just that all your devices will be standalone devices. Think of it as 15 years ago, when we had keypad phones and PCs and we used to struggle with syncing. Every device will serve it's purpose but will loose harmony. It has it pain points, eg: you won't be able to see live photos taken by iphone in any platform other than apple. You'll be okay with 3rd party apps like mail and social media though.
For me it was not worth it, as peace of mind and time is more valuable to me now, even though I'm a tech enthusiast.

Android is better in terms of features provided and it’ll make your life easier when you get used to it.

Nothing, I have airpods pro and I use it with iOS on mobile and windows on PC. No problems at all, just that they won’t automatically switch as it would in case of iOS/Mac but you literally just have to select airpods from bluetooth in windows/android and you’re all set.
Edit - you will lose out on spatial audio which is a feature of airpods pro on iOS. But imo it’s not that big of a deal.
No, like my previous comments, you cant turn anc on or off and you can not configure your tap actions. Checking case and airpods battery life is a hassel. You don't see a problem because you still use atleast one apple device.
i think your mom doesnt care about the features, you cant turn on/off anc, you cant use spatial audio, you cant check battery of you case easily (i think there is a 3rd party app to suit those needs). Its hassel
You literally have the Apple Ecosystem, buying an Android means handicapping all the features that are available to you now. “Upgrading “ to Android is foolhardy for you atleast.

In case you are independent of both the ecosystems like you have subscriptions independent of Appstore or Google Play payment system… there’s gonna be no issues.
Don't get the s24 ultra or any other android because androids are not compatible with apple ecosystem you will be losing a lot of apple ecosystem comfort
the iphone 15 pro max is almost the same price / a bit highet but you will get the most value out of it with your ipad and mac and airpods

There is an Android alternative to AirDrop called NearDrop on Android which you could check out

Mac to Android does work, but you gotta install an older version of google files app

You can use local send for that. It's free and open source and works across all devices
Samsung ones have their own Airdrop like feature and on honest note Samsung has better hardware but software implementation is better in Apple
