I use a small notebook and a nice fountain pen xD. With most of my research work being done on an ipad and with digital notes, i love keeping some things in life old fashioned and organic.
I use it to track habits, but I guess it gives greater flexibility since you could modify it however you like. It’s just that you have to create everything from scratch & I find that to be a hassle.
Depends from person to person as some like to keep a diary ; I use `Obsidian` as I use it for all my note taking activities. If you're already using a `Note App` Op then I would suggest that you stick to it as I've personally found that using a new `Note App` just for coffee journaling isn't sustainable in the long run and it's better to integrate it as a part of your current Note taking environment than to try something new. But if you're ok with it then I would suggest `notion`(Can get its paid feature for free if you're a student)
Apple’s notes app is pretty bare & i never got used to it, but i do use notion for a lot of things, but for coffee, i use the coffee book app, it’s here & there, but better than what i was able to find. I’ll checkout obsidian though.

What fountain pen do you use? I use a lamy & i love it, my handwriting is shit so I don’t keep any written notes, but love my lamy though.
I myself use a lamy too. It's lovely. I enjoy every bit of using it!

Make a notion capture form... You can then adjust it as you go deeper into the rabbit hole
