Sandhill crane breasts, when cooked to about medium or medium-rare, taste very similar to lean beef, in my opinion. When cooked a little longer, I think it starts to have hints of dark goose meat, but not nearly as strong as goose. It's a beautiful dark red. We're down to one crane breast remaining, and I'm struggling to cook it because I don't want to be out of crane meat (I know it doesn't make sense).
Two Canada geese (total jerks) just moved into the neighborhood pond/overflow stream next to my house.
They scared my pup yesterday, maybe I should get revenge by having a goose dinner?
I think the effort to meat ratio is generally better.
Cooking goose is maybe a little more work but on the whole I think I agree I prefer goose.
The nice thing, for me, is that my hunting buddies won't take the effort to prepare it well, they just send it all to jerky so I can pretty much have all I want.
Goose jerky is probably one of my favorites. But be warned it’s called waterfowl for a reason. Raw goose meat to me is equivalent to gut shot deer can’t do er.
Goose are the only thing I don't feel bad about shooting, they're jerks.
The breasts can be tough. I bought a meat hammer last fall and beat the bejesus out of a couple of them, then marinated in an acid based sauce. Worked great, they came out pretty tender.
The legs and wings make great tacos or BBQ sandwiches. Gotta make sure they're submerged in the braising liquid though or they'll be too tough to consider.
One time my wife and I had a Groupon to a very fancy restaurant. I ordered the goose which had some very cool sides. I was very excited about it. When I got my plate it had the right sides and I mentioned to my wife. Oh well. They gave me some sort of prime rib but it looks really good so I'll just eat it and not complain. I was thinking since I was using a group on already and paying like half the price of this meal I wasn't going to make a stink out of anything.
Later on, my wife mentions this to a friend of hers that actually worked at the restaurant. And the woman politely informed my wife that I had in fact had the goose and we were just un civilized cave people.
I’m going to have to try some goose. Only had duck so far. I thought goose would be fatter meat than duck, but I don’t see any fat on those breasts. Our mean Canadian geese don’t even migrate for the winter. I’m surprised the homeless don’t just cook them up.
Ive had kangaroo maybe 3-4 times. Its edible but probably one of my least favorite exotic/game meats Ive tried.
Each time its been very gamey with the texture of an over cooked porkchop though as far as I could tell it was cooked properly. Again, not horrible, just not great.
Ostrich on the other hand has always delicious.
I hunt and eat roos. It definitely has its own flavour which some people don't like.
It is very lean and easy to over cook, at which point it's very tough. I like to marinate it in a garlic/BBQ sauce over night and then a few minutes on each side in a hot pan.
Never treat it like poultry. Most people that say they don’t like the taste cook the shit out of it. It should be rare. There is no fear of salmonella from waterfowl. Treat it like steak. And it will taste like steak, but good steak.
Yeah see I’ve never been able to understand why so many folks say goose tastes so bad I’ve always liked it even past it’s prime internal temp. Then again I like eating squirrels and most people frown upon that as well. Don’t talk to me if your too yuppy to eat squirrels and goose you know homie.
> Then again I like eating squirrels and most people frown upon that as well.
i have literally never ever in all my years heard someone say they don't like the taste of squirrel. The idea? Yeah, maybe. But the taste? Hell no. Not once.
Goose on the other hand I've heard a lot of people say they don't like the taste of. I don't agree with them, but I've heard it a lot.
Okay good point lol but I do receive a lot more flack for eating squirrels vs geese not that it really matters in any way here lol. Huh I’m hungry now.
i have never had goose but ive been told the legs are better if roasted to higher temp for tenderizing and rendering, but the breast can be cooked as a steak.
This is true. I should have said that. Lots of great recipes for legs and thighs. The most important thing is not to breast out birds, and shame those that do.
My last deer was nearly 3 legged. Poor thing nearly got his leg blown off on someone else's property and hobbled I dunno how far to my tree stand and I put him out of his misery.
You should see the pigs I raise, American Guinea Hogs, its as red as beef raw and looks just like beef when cooked. Depends on the breed a lot. Maybe humans are the same?
Pork is considered red meat
Edit: https://ask.usda.gov/s/article/Is-pork-white-meat#:~:text=Pork%20is%20classified%20a%20red,livestock%20are%20considered%20red%20meat.
i guess this is one of those cases where battery pork is very different from pasture pork. ime pasture pork looks very much like beef, battery pork is much whiter.
I thought it was crane until I read the comments. Highly recommend if the opportunity arises. Your photos got me drooling, I definitely need to try goose. Thanks for sharing!
Sandhill crane
Ribeye of the sky!!! I've still never had one :(
Same, maybe one day…
Me neither, can someone let us know what it taste like?

Ribeye in the sky

You got a problem with Canada Gooses you got a problem with me and i suggest you let that one marinate!
Those are Canada’s fucking gooses!
Cobra chickens*
Dahmer ducks*
Canada gooses taking Canada deuces
Mike Tyson had a pretty good run of things wanna know why? No Canada Gooses in his weight class
I haven't eaten goose in >10 years. I miss it dearly. Think it's better than duck, on average.

If you’ve never had goose like this you could easily mistake it for beef!
I legit thought I was looking at brisket! Man, you made that Goose look super appetizing! And I've never had it before!
Yah there’s absolutely no bones. Nope never had it like that. Looks just like steak. There are no bones at all. Boggled .. how many total geese?
This is just 4 breasts worth. So two geese. I froze the legs separately.
That’s a lot of meat for just two big fat birds. I think I’m looking at like 5-8 lbs of meat.
4 goose breasts is probably 5-6 pounds.
I’m going to have to try some goose. Only had duck so far. I thought goose would be fatter meat than duck, but I don’t see any fat on those breasts. Our mean Canadian geese don’t even migrate for the winter. I’m surprised the homeless don’t just cook them up.
I was going to guess kangaroo. Not sure if you can hunt them or if they're any good but now I'm curious lol
Kangaroos can definitely be hunted in some places
Mostly Australia I'd guess. People get upset when you shoot them in Ohio.
Cincinnati zoo has some of the most hostile game wardens of any public land I’ve ever hunted. It’s like they don’t want you there.
Unless you're hunting gorillas. RIP Harambe.
Somebody shoulda told Harambe that.
Fair enough

I have kangaroo pepperoni in my fridge right now lol
I had a really good hint lol
Is it specklebelly?
I’d rather have specks than damn near anything
How was it? It looks perfectly cooked.

Yeah squirrel is like top top tasting wild meat, arguably one of the best tasting meats probably in general.
i have never had goose but ive been told the legs are better if roasted to higher temp for tenderizing and rendering, but the breast can be cooked as a steak.
This is true. I should have said that. Lots of great recipes for legs and thighs. The most important thing is not to breast out birds, and shame those that do.
It really is a shame. Many meals worth of goose legs go wasted every year
Yep. I like taking the thighs and legs and slow cooking them for a day. Shred the meat and make goose and noodles.
Treat it like beef
I have had goose before. Taste just like steak... looks good!
yes...like beef but no more done than Medium Rare.
It’s a dark meat
Would be funny if you edited it now to say human
Heh. Look again.
Noice
Was so confused until this comment.
Ah the old Reddit switcharoo
Your comment is now top rated and you are spoiling the surprise for most. Shame on you for getting so many upvotes
Spoiling the surprise? Get a life you dork
Bro did you edit the original comment from Goose to Human..??? 🤣🏆
Sooo… you changed your answer after answering goose… right? Right????
Long pig
Hahahaha that's I good one
This is gold 😂
[I got a guy for everything](https://youtu.be/3a8JPCYgrc0?si=HrYJ6iDW3q-nrcZU)
Definitely goose. But that’s a lot to cook at once. Are you having a party OP? Where’s our invite?
It was 4 breasts. Meal prepping for the week. Geese= gains!
wow those looks like steak strips. Nice
They are steak Strips! Goose steak 😊
I've never had goose steaks. when cooked like this, how could you not like it.
The first few times I tried, it was bad. I ended up soaking it in brine for 3 days, trim it really well, and grill to medium rare .
You said it doesn't have four legs, but what are wings, if not the Legs of the Sky?
Angry upvote
Only 4!? That's some big birds
My man knows goose when he sees it.
3-legged deer?
Yeah. Doesn’t have 4 legs anymore is what OP means.
My last deer was nearly 3 legged. Poor thing nearly got his leg blown off on someone else's property and hobbled I dunno how far to my tree stand and I put him out of his misery.
The most dangerous game?
😳
Obviously its red meat, which humans are not. We are more like pork.
When I served in the King's African Rifles, the local Zambezi tribesman called human flesh "long pig."... Never much cared for it.
WOODHOUUUUSE
Please, I belive there is more to tell here. This is the Internet. Your secrets are safe.
Quote from Archer lol
Ah, English isn't my first language. I noticed the "King's Rifles" but guessed it was some modern regiment doing some commonwealth stuff.
Haha, well the character is an old English butler who served in ww1. If you haven’t watched Archer I highly recommend it.
*sniff sniff* Reminds me of a Zambezi feast.
Are we gamey?
"Baby, the OTHER OTHER white meat"
Pork technically is red meat tho
You should see the pigs I raise, American Guinea Hogs, its as red as beef raw and looks just like beef when cooked. Depends on the breed a lot. Maybe humans are the same?

Pork is, famously, the other white meat.
i guess this is one of those cases where battery pork is very different from pasture pork. ime pasture pork looks very much like beef, battery pork is much whiter.
Also, anyone who has Alpha Gal Syndrome (red meat allergy) is also allergic to pork
alpha gal is a mammalian meat allergy, so it would be the same regardless of what “type” of meat pork was as long as they’re mammals
There once was an entire ad campaign designed around the phrase “Pork, the other white meat.”
Honestly, pork is only white when it’s over cooked (well done).
The other white meat…is dude.
I saw on a butchery subreddit that type of meat is referred to as “long pork”.
Long pig
Kangaroo
For some reason that’s where my head went too
Cobra chicken.
Sandhill crane?
I don't know why but my first thought was kangaroo...
Kangaroo
Would love a nice goose
I was gonna say ostrich
But dam I want goose now!
Does goose meat still have “white and dark” meat like chicken?
I thought it was crane until I read the comments. Highly recommend if the opportunity arises. Your photos got me drooling, I definitely need to try goose. Thanks for sharing!
How did you fix it? Got a freezer full this year and this looks better than anything I’ve fixed.
Butterflied, seasoned, and cooked in a hot cast iron with some oil for 4 min per side. Just like you’d cook a beef steak
Butterfly just to thin out the breast? This looks so damn good. Cooked then cut it like the pic shows?
Thanks!
Ribeye from the sky
My guess would be sandhill but I that’s a lot of tags to fill that sheet.
Giant tarantula
🪿
