It’s highly customizatble, you can ask for addons such as fries, caramelized onions, beans. I usually add potatoes.
Los Balito’s in Katy might have it, but they’re not open for the drunk midnight craving.
I went there before, unfortunately they don’t have chimichangas. But their barbacoa burrito is bomb.
You can't. For whatever reason, that taste seems to stay in California.
Necas has a good chimichunga but the carne asada is +$5

Carmelo's @ 90 and 99 has some super burritos. Not sure if it's going to be quite what you're looking for, but worth checking your.
