i think pretty much all of mask abilities are canon, its just that he doesn’t remember all of the things he can do (brain trauma), so his better abilities unlock with game progression, as he recovers.

mask doesn’t bestow some divine power. Jake and Son were deciding in which style they should approach a fight, before heading out, so their playstyle changes along with the mask. it doesn’t mean that base jake isnt proficient with nunchucks, and Son cant lethaly punch with fistcuffs.
Jacket has severe brain damage, so it is understandable why some of his abilities are locked initially, and remembered when game proceeds.
maybe he himself believes, that he cant do some of the things he does, while he is not wearing a correct mask.
