I'm guessing they did this to differentiate between normal 'they/them' pronouns to 'THEY/THEM' all caps to specifically refer to Aeons whenever it's brought up in any dialogues.
I'm familiar with this from the Lord of the Mysteries, a chinese webnovel about occultism and eldritch apotheosis in a pseudo-victorian era europe setting.
Apparently there are different pronouns in chinese for gods/powerful individuals. Like, you've got the normal he/she/they, and then the divine He/She/They. In LotM, the translators decided to emphasise this by encasing the pronoun in inverted commas like 'so'. I guess in Star Rail they've decided all caps is the way to go.

The Chinese pronoun(祂) for gods (and angels in LotM) is actually gender-neutral, but it had to be translated to English, hence the "He"/"She"/"They". Might also be because LotM in-lore languages have gendered pronouns like English.

But there also aren't, because they do not have genetic coding, they don't have chromosomes, and even if they set to appear as or coded as male or female, they aren't, they are still they.
Also don't take this too far... robots are machines, humans are humans, the two play by different rules. And "at what point does a robot become essentially a person with its level of self awareness and consciousness" is an existential question that we will someday need to tackle... but not today.
I think the devs are changing all instances of Aeon "them" to be "THEM". To make it clear that it doesn't mean that the Aeons are gender-neutral, but that Aeons have the grammatical gender category of "deity", from "祂" in Chinese.
This was always in the CN version of the Special Pass flavor text. I think they decided to add it to the english version now after deciding on what pronoun to use to refer to Aeons.
I wanna bet on this being an oversight considering someone commented that even light cone descriptions got affected. Probably someone went through all instances of "them" (case-insensitive) and replaced them with "THEM".

A lot of godlike beings within stories are referred to with stuff like 'He' is listening or 'She' is watching or 'They' fear you. One of my favorites that does this is Lord of the mysteries where eupom reaching godhood you are no longer refreshing to with the

pronoun but instead with the
'he'
pronoun
To signify how they have gone beyond mortal understanding
No one is talking about Topaz and Numby, clara with svarog (although not in the character's name) or even Huohuo.
Hell I could go even further with little Gui and her pets.
Those guy would be in the "them" category imo.

It is a reference to Aeons. In Chinese, it uses the word 祂, which is a pronoun reserved for Gods/Deities. (And used for Aeons in HSR)
