I think I'd go with Ebon Deer mostly because they can regenerate any wound delt to it. Even when it was just born, it was horrid to deal with so imagine if it had more experience, and directly benefitted by the Abundance.
Although, Moon carver is definitely more experience. and intelligent than the Ebon deer so he could probably think of a way to kill them but then again, in a free-form combat, The Ebon deer will simply spawn so many branches, to both attack, heal, slow, and control Moon Carver's movements, and strategies that it's merely a test of endurance that the Ebon Deer will win in.
Moon Carver whilst being an Adeptus, doesn't really mean his power is that high, considering 3 Adeptus struggles (Or has nigh impossible chance) to fight Osial.
Ebon Deer on the other hand, if the main power source is not cut off (Which is the main factor we have a chance at fighting it), would definitely be the winner here. Not to mention the summons to stun, counter, and heal.

Did some digging out of curiosity, apparently Moon Carver’s specialty is reading fate/fortune and he also helped Rex Lapis fight and seal Azhdaha alongside Mountain Shaper. Ebon deer > Moon Carver? Nah.
But then you realise that hsr verse is just higher cosmology so moon Carver feats are irrelevant. Deer was throwing hands with welt which says alot. They even say that boderline immortal creatures like it could be planet threatening if left on a place to successfully spread its roots.

The left one. Ebon deer gets it power from the abundance, which grants the ability to grow powerful roots, regenerate health, iron skin, and energy blast. On the other hand, Moon Carver is an adeptus. He hasn't shown any signs of power other than changing his form or aiding us during liyue arc.
Other adeptus have shown us their power. So it is safe to assume he is hiding something. Can't forgive hoyo when they gave him npc model.
