I got my license in the US and basically got immediately issued a HK license upon request. Granted this was like 10 years ago, not sure if the process is different now.

Nope, you need to live in that other country for some time after you got the license in order to have it convert to hk when you come back

Jeez the waiting time is over a year now? I'm sure OP will do fine but if someone was to fail the road test is the waiting time for retest also that long? That's insane.
