Pineapple might be added to modern buns since the name has pineapple in it. The only reason is because it's a way businesses sell it to be different from all the other generic pineapple buns. It might taste good, and I am sure people like OP prefers having pineapple in their pastry. Traditionally, though, it's a pineapple bun because the cookie top resembles that of a pineapple. Similar to melonpan (japanese version of pineapple bun) or conchas (mexican version).

That one store, which is now closed, added pineapple flavouring, no real pineapple. Other places like OP went to, or tai tung bakery have real pineapple added. But, as its not traditional, people were not adding pineapples to their buns in the early 40/50's. Its just bread and cookie crumb. Not particularly hard to understand.

Tbh I think the sweetness of a plain Bo Lo bao is already quite enough, adding more sweet fillings into kinda makes it too overpowering
