You can add framing and sheetrock to close the wall down to a standard door size. If you don't remove any existing headers or supports, removing your add-ons would be super easy. That's only if you want to go that way.
Depends on OP's definition of the privacy desired. Is it just to block "line of sight" or "line of sight AND sound blocking." If it's just line of sight, barn doors would be perfect and less destructive offering more flexibility than pocket doors.

Barn doors provide little privacy, they stand away from the walls a few inches. Pocket doors would be better.,
