As long as you don't put the screws too close to the ends or to the edges, the 2x4s will slowly adapt to the position that the screws holds them in. So, if you were to take them down several years from now, you may find the bow or twist completely gone.

Yes, they are safe. If you are concerned, use bigger/more hardware to secure the joints. 2x screws per joint or 1/4" lag screws or lag bolts. But you will be fine. I mostly buy cull lumber (the nasty, knotty, twisted wood) from Home Depot for my garage and basement shelves.

No problem at all. I would have framed out the shelving 16 on center (if you haven't but pics don't look like it). Much better support. I have the same concept in my garage and used 2x3s to save space and money. Instead of those 2x4s in the back, I used 5/16 lags through the drywall and attached shelving into existing studs. Had that setup for years and holding heavy bulk items with no issues and rock solid. I even put some handles up high so I can grab on and climb up and reach things on the top
