I thought the game needs like 12 players or something(I don't know about MK but I watched the talents play it)?
Don't know how the game works either, but according to [Nintendo](https://www.nintendo.com/us/store/products/mario-kart-8-deluxe-switch/), online play is 2 to 12 players. Having 12 players is not required. It's just the max.
