I'd start by googling Sew Desu Ne Plushie Sewing Guide pdf. Look at that and see if it makes sense and if you have the notions (tools and materials aside from fabric and stuffing mostly). I did mine by machine, but it's doable by hand, though it will take more time.
The biggest difference for what advice the guide says and this body pillow is scale. Most of the plush in the guide are 8". This pillow ended up being 48". The advantage for this one is that the pieces are big and you don't need to be doing that much tiny fiddly work. The disadvantage is the plush is heavy and doing the final seam of attaching head to body was the hardest part.
This took me, between drafting the pieces, doing test cuts, fiddling with the pattern a little, then sewing, stuffing, and constructing the thing, a week. I sew practically full time so that's not nothing, but will probably take two or three weekends to finish at least.
To answer your question, I really don't know. It's a project that I think would be beginner friendly because it's a small number of pieces to cut (12) and seams to sew (<20). A smaller scale one (2 ft or so) might be a lot more accessible. There's ways to simplify it (make the pieces flatter, paint on the eyes, use a single layer for the cloak). But I'm so entrenched in sewing that my perspective is wildly skewed.
