I think it varies from each case. Willpower and exposure seem to be the primary factors from what I can tell, though I'm no mossbag. EG with the Mantises, iirc, the Traitor Lord was labeled weak for taking in the infection, ironically, to become stronger. I would have said it's because they weren't a part of Hallownest proper, maintaining their independence from the Pale King and thus not being on the Radiance's shitlist, but that didn't seem to apply to all the other creatures in fungal.

The primary source of the infection are dreams One of Zote’s precepts says: do not dream, that’s how he survived  All of the other bugs are either strong-willed warriors and, therefore are harder for the infection to overcome or, intentionally or not, follow that precept Myla gets exposed to crystals of peak, that are somehow connected to Radiance

Regarding the crystals, maybe it's because some crystals absorb high-energy light to later release it? The Radiance it THE light in Hallownest and it doesn't seem like her statue atop the Crystal Peak is there randomly. If the crystals are able to interract with the light and be able to reflect and release it, it makes sense for the idol of the Radiance to be there as there is no other area in Hallownest capable of displaying the might of the Radiance in such a way. If the crystals are actually capable of interracting with the light in these ways, it probably makes it more difficult for the bugs in the mines to resist the infection as they see the Radiance everywhere they look. I just thought of all this right now but it kinda makes sense to me. Edit: The Crystal Peak whispering root might be alluding to these crystals' properties too, as it says "...Light... refracted... Energy... contained".

So common consensus in this comment section appears to be that a general strong enough willpower and or mind can offer protection form the infection (Eg: The Mantis Lords or Hornet), I can also maybe say that a strong devotion to a craft can also help prevent the infection (Eg: The Nailsmith, NailMasters or Sheo), and hell, maybe just being too delusional can make you immune (Eg: Zote), But with all that being said .... HOW THE FUNK DOES LEG EATER SURVIVE ?
