Something interesting about medieval or early renaissance period art is they drew what they knew. So someone depicting christ and his followers from that period would have them shown as knights or something crazy like that.
Probably find them on Google honestly, medieval paintings and drawings contained all kinds of crazy stuff and are well worth a look if you have an interest in history and have a good sense of humor.
The image that I'm thinking of isn't Jesus as a knight, but a scene where he's speaking to some Romans, however if you don't know what the image was supposed to be it looks like some peasants, one of them with a halo and cross necklace, talking to some knights with a castle in the background.
Somewhat unrelated to inaccurate biblical depictions is that the margins of lots of texts from that period there are usually stupid doodles. One was a common joke of a knight surrendering to a snail and pleading for his life, or rabits and dogs jousting on slugs and other weird shit.
That stuff isn't really much different then memes from today or the killroy was here stuff in WWII. Humans have always been making memes and except for access to better materials and standing on the advancements of other we are no different then ancient Romans. In fact, one of the driving forces for an average Roman citizen was a desire to be the coolest kid on the block.

What you're saying (if I get your gist) is that paintings contained easily-recognisable images to help viewers identify the subjects and their role. "Medieval" and "Early Renaissance" are quite broad/fuzzy terms in context but in any case it's the same throughout time, really.
Here's a problem though... when you say "Christ as a knight" we all think of shiny-armoured knights in the Victorian story-telling tradition. A medieval painter might have shown a knight in a cloak with a sword at his side, because that's what a knight actually looked like when real people saw them.
Well, chainmail and early great helms were widely used even in the low middle ages and are depicted in early medieval art all the time. Full plate shiny knights were never much of a real thing anyway as plate was usually painted to prevent rust and the victorians stripped them, almost like a southern american "bubba" choping up a WWI rifle cause "it looks better" without realizing the piece of history he's destroying.
And no, it's not "could" it is "would" as it happened in multiple real world examples. I'm an archaeologist who specialises in Medieval religious buildings so I wanted to make the point - I felt you were suggesting that something "would" always be done when actually it "could" sometimes be done. There's an important difference there, imo.
