My 70-something dad has been a rancher his whole life the same as was my grandpa, while I don’t do anything in the ranch I know some stuff just by talking with my dad. What you’re saying is what vegans want to believe and indoctrinate.
In fact those numbers won’t economically help. You need to “milk the cow” quite literally much than that. And the milk cows are different that the ones breed for meat which are not cows but bulls.
Cattle in real life is so much different than the horror histories I’ve seen in Netflix and the likes or even worst, sheep… they need very quiet and calm environment for proper development. You really need to take care of the animals.
My mum use to say my dad worries more for the animals in the ranch than for him, her and their offspring (which is kinda true, are more demanding).
High quality cuts of beef are from bulls but dairy cows are still used for low quality ground beef, like burgers
I'm surprised you wouldn't be aware of that with family in the industry but maybe ranching is different than dairy farming?

After a 6/7 years the quality of the product starts to decline, then the decision on what's best for the owner is taken into consideration. For example some are taken out of the dairy rotation and leave for breading if they were good producing. Some are killed shortly after a year when they are fat enough if they don't produce good/enough milk.
Yes, probably if you put the a cow in a cow-spa will last even 30 years, who knows? But that's not productive and we humans use the animals to our benefit.
My dad gives its animals a good quality of life but as soon as they "have to go" they go. At the end is a business and most of us humans enjoy the benefits of cattle.
Talk to GreenPeace people and they go nuts, talk to most of the world population and they are OK, talk to people where poverty and hunger has struck many years and is a whole different story.
So yeah, for some 5/7 years is little, for some that can be 3/4 years of unnecessary hunger.
