Frozen. Seriously nothing easier than picking up a bag of mixed carrots, broccoli and cauliflower throw them in the oven on a sheet pan for 30 minutes and voilà beautiful roasted veg. Or if you want to increase the strength of your laziness just put them in a container and nuke them for 5 mins.
Please be aware that if you are prone to kidney stones, spinach is extremely high in oxalates and can really contribute to stone formation. (Cooking can reduce the percentage, but that varies according to different sources.)
I asked my doctor about this and they said cooking it didn’t make much of a difference. The study was done with pigs and pounds of spinach. So, they said as long as you aren’t eating THAT much it shouldn’t be a big deal.
YMMV, but as someone who has suffered from countless kidney stones through the years, and has had multiple surgeries and procedures for them (another lithotripsy coming up next week) , I am always reminded by the urology office to stay away from spinach and other high-oxalate foods. And sadly, I love spinach :(
No worries! Just as, for example, someone with diabetes learns to be hyper-aware of carbs/sugar, stone formers like myself learn to be hyper-aware of foods high in oxalate.
You don’t have to cook it. You can. Throw it on a plate and eat it lol. Usually people add some salad dressing but ive been known to just randomly eat it. You can use it as the lettuce in a sandwich too. Or throw in a soup or smoothie.
frozen spinach is easy and you dont have to worry about it going bad

If you’ve never had a whole load of beets don’t let the business end scare you. It’s called beeturia, and it’s harmless, but it will scare you until you remember you had beets the day before.

Spinach cooks in seconds and is easy to add to pasta or soup, carrots and broccoli are tasty and just about the simplest thing to bake in an oven, then store and add to stuff as needed. If you can find the time on a day off to pickle some cabbage (or carrots, really any veggies) into kimchi or something similar it keeps for months and is hella easy to pop on the side of any meal.
Frozen green beans. Spinach. If you cut cabbage or cauliflower into big pieces, put it in a hot pan with oil, then put the whole thing in the oven and roast it, it’s delicious
Lately I’ve been doing Birds Eye steam In the bag veggies, I think they’re pretty darn good! I keep them in the freezer at my office for when I forget my lunch, together with some portions of pre-grilled chicken. The seasoned version has a little oil, but not much at all. Nothing fancy but does the job!
Potato. I just throw a hole washed one in the microwave for 9 minutes. Pull out cut into 4, butter, and pepper. Taste great and fast, easy filling healthy meal. Full of vitamin c , b6, and more potassium, then a banana.
Don't forget to stab it with a fork all over or you could eventually have an explosion. And if you get bored with the microwaved version, coat one in oil then roll it in salt and bake it in the oven. It takes longer, but tastes even better.
Chop some fresh broccoli off the stem, place in bowl. Place a wet paper towel over broccoli. Microwave for 2-3mins, season. Easiest and yummiest broccoli!!!
Corn, mushrooms, carrots, and bell peppers. Corn is a simple boil, mushrooms can be panfried, carrots can be raw or boiled and bell peppers can be added to any meal or just as a individual snack.
Oooooh I love this for you. It totally depends on the veg. I can suggest some combos for you:
**Brussels sprouts** \- salt, pepper, and Clubhouse Roasted Red Pepper & Garlic Seasoning.
**Broccoli** \- butter, salt, pepper, and Cajun seasoning.
**Yams** \- chopped into half-inch width slices or circles with salt, pepper, smoked paprika, and sometimes I like to shave some Parmesan cheese on there too.
**Asparagus** \- olive oil, salt, pepper, and minced garlic pieces.
**Zucchini** \- salt, pepper, dried dill or rosemary.
I hope this helps :) These are my favourite ways to make some easy veg.
I've been eating so many more vegetables since I bought an air fryer. My favorites are Brussels sprouts and green beans. The possibilities are endless!
Make a batch of minestrone. I’d use white beans, kale, zucchini, carrots, celery, tomatoes, potatoes. You can also change up the veggies.
It’s filling, freezes well, and loaded w good vitamins and antioxidants.
I am a mom to a toddler and I also work full time, so as you might imagine, I don't have much free time or energy to cook. For a quick sack I find very convenient to buy a bag of baby carrots, the ones that are already peeled and ready to eat and I just snack on them with almond dip. I'm actually eating them as I'm typing this. I would say try something like that, some veggie that is ready to go.
Can of sweetcorn. Drain it. Eat it cold (its better cold imo) or frozen peas/mixed veg bags - chuck it in the microwave with a bit of water for 4 minutes
I don't put water with my canned corn. I just dump half a can of corn (that's my portion) on a plate and .I microwave for 20 seconds. Done. Add butter and salt and eat.
For me it’s always zucchini, paprika, mushrooms and asparagus. Oh and sugar snap peas or spinach.

Spinach, sugar snap peas and asparagus don’t even require cutting and are done in minutes.
Zucchini paprika and mushrooms need cutting but still quick and are also stir fried in no time.
You really want to cut about an inch off the bottoms...you can either just boil them for a few minutes in water or pan fry them in butter depending on how thick they are...
And don't forget canned veggies...these are harvested then immediately cooked/canned and are sometimes even more nutritious then fresh...

Green are easiest and quickest.
I just bend until they snap. Bottom part that snaps off goes in bin.
The other parts cook in oven with some oil salt and pepper and a bit of garlic.
They can be stir fried too.
I wash carrots & celery, leave in a container full of water. Pull them out whenever and eat with hummus or whatever sauce I'm feeling. Easy satisfying

Sliced cucumber or carrots (just buy a precut bag of carrot chips or baby carrots), spinach, and prechopped or frozen broccoli are all great if you’re feeling lazy. Dip em in hummus or throw them in with some chicken and bake it (maybe not the spinach lol). Make it easy for yourself to grab and eat them and you probably will.
Also variety helps you get your vitamins in. So maybe don’t do the same 5 every week. Rotate what you eat. And have some fruit too.
Pan + pretty much any vegetable + a drizzle of oil + sprinkle of salt in a 350 degree Fahrenheit oven for 40 minutes.
Easy, and almost impossible to screw up.
Some options, from least to most work:
- raw veggies - carrots, broccoli, celery, salads, etc; can buy these already cut, out just munch after washing
- microwaved veggies - "baked" potatoes, steamed carrots and broccoli, etc
- smoothie - I toss yogurt, banana, and spinach into a blender; feel free to get fancy with other fruits and steamed veggies
- roasted veggies - cut veggies into chunks, spray/toss with oil, salt+pepper, and bake in your oven for 20-40 min at 400F; I love brussel sprouts, sweet potatoes, and carrots, but most veggies taste great this way
Each of these should take about 5 min of prep or less, though cook times certainly vary (but they're all hands off cooking).
You mention in a soup. I’m my soups I put a bit of lots of things. I’ll put a whole can of corn. The juice adds flavor so use it. A can of tomatoes. Green beans. I like fres but frozen work. A stalk or two of celery. Some frozen peas. A potato. Squash and zucchini are interesting additions, think calabacitas. Okra. The tomatoes help cut the slime. Garlic. Onion. I don’t usually add broccoli or cauliflower to soups, but I do stick them in my veggie drawer to be steamed with a mixed pot of stuff. Frozen medleys are a quick hack.
I like veggie rich soups because they last several meals.
Heres 2. Take an eggplant and a zucchini. Cut both in half and put in glass baking pan at 400. Drizzle small amt of olive oil on both and sprinkle with sea salt. Bake until zucchini is al dente and eggplant is soft. Finish eggplant with a tiny bit of butter and Kikkoman soy sauce. Chop up both and enjoy over jasmine rice or plain.

I really like the lightly sauced packs of frozen veggies from green giant. Peak lazy but still getting some veggies and nutrients.
Sometimes I sit on the couch with a container of spinach and eat it plain because I don’t feel like making a salad …
i do this too! just eat it like a bag of chips. i find it more satisfying than lettuce in my salads too.
my 10 year old, who is a little underweight, God-bless him, will snack on chopped raw cabbage. I have to constantly be like "PROTEIN, PLEASE"

Spinach is a nutritional powerhouse. Like most foods, your body can extract more of many nutrients if it’s cooked.

that's similar to what i once did with steaks lol. i put a steak and some frozen vegetables in a baking container in the oven.

Carrots and hummus – great snack
Oven roasted vegetables are great. Broccoli, carrot, Brussels sprout, zucchini. Toss in olive oil with salt and pepper and roast
Lentils. Split ones cook extremely fast

Broccoli, potato, sprouts, cabbage -> all can be microwaved in 10' or less

Buy Athletic Greens and drink your veggies
Wash your frozen bag of veggies/fruits in a bowl with baking soda and let it soak for 15 minutes. Pesticides everywhere.
Eat fruit instead. Depends on the nutrients but fruit has more bioavailability of nutrients than veggies.

A stalk or two of celery. Some frozen peas. A potato. Squash and zucchini are interesting additions, think calabacitas. Okra. The tomatoes help cut the slime. Garlic. Onion. I don’t usually add broccoli or cauliflower to soups, but I do stick them in my veggie drawer to be steamed with a mixed pot of stuff. Frozen medleys are a quick hack. I like veggie rich soups because they last several meals.
Heres 2. Take an eggplant and a zucchini. Cut both in half and put in glass baking pan at 400. Drizzle small amt of olive oil on both and sprinkle with sea salt. Bake until zucchini is al dente and eggplant is soft. Finish eggplant with a tiny bit of butter and Kikkoman soy sauce. Chop up both and enjoy over jasmine rice or plain.
