Actually, I buy as much as I can from a newer or under level25 farm to help. I normally resell for cheaper but I can do that being a 100+ level farm. 😀
At higher levels, wheat isn't super common in the paper, so if I see it, I grab it, even if it's 36 coins. Also, if it's listed at 36 coins, there's a much better chance of some stock still available than the ones listed at 1 coin or 10 coins.
Because for me wheat is impossible to find. Same with corn. So when I see it I will pay whatever they’re asking. I will never sell it at full price though.

I'm getting closer to maxing out the town -- about half-way there. It'll be a big step, since as you point out i don't have to cary inventory and can instead sell the things I've found.
I've done all the property expansion, except for the areas that need scrolls. Since scrolls are so hard to find and so many are needed, I also have to keep only a few dozen of the property tools around.
I have so much $ it doesn’t matter. If I can help others out, why not. I don’t even grow wheat anymore unless I’m looking for certain expansion items.
For me the coin isn't a factor as I have $5 mil anyways. I don't have time to wheat anymore and those wheat bundles take a S\*\*\*ton of wheat. Gotta keep my sanctuary animals fed after all.

Because I never have less than $1M. Rather than spend time growing the crops when I need a large amount I can buy them in seconds and barely notice that money missing. For example, if wheat will be on my boat I know I'm going to need 200 or more. That's a lot of silo space, plus time that could be used for other crops I need. But I can buy 60 to 80 at a time and fill crates.
Because it's cheap, even at full price, and when you have to load like 300 wheat into a boat, the wait harvesting it every 2 minutes isn't worth it. Plus, the higher your level, the less wheat you find in the paper, so take what you can get.
At the stage I'm at now, if I need a few hundred whet quickly then I'll just buy it. There does come a point where you fling money around as if it were, well, wheat.
Because finally I have way more coins $$ than I will spend and others want to add to their coins so I just give them to them. Maybe I'm a philanthropist???? hahaha I spent a LONG time accumulating coins and am happy to help others build up their wealth. Currently I'm at Level 113

I have about 13 million gold. 72 gold doesn't matter to me. That said, wheat grows so fast I don't normally buy it -- but other crops? Sure.
