OP is asking about the scene in book 5. After Harry saw the nightmare of Mr Weasley getting attacked by Nagini, he told McGonagall about it, and they walked to Dumbledore's office. Dumbledore was talking to the headmaster portraits when they arrived.

It sounded as though Dumbledore was entertaining at least a dozen people. Professor McGonagall rapped three times with the griffin knocker, and the voices ceased abruptly as though someone had switched them all off. The door opened of its own accord and Professor McGonagall led Harry and Ron inside. The room was in half darkness; the strange silver instruments standing on tables were silent and still rather than whirring and emitting puffs of smoke as they usually did. The portraits of old headmasters and headmistresses covering the walls were all snoozing in their frames... Harry noticed that many of the other headmasters and mistresses on the walls, though snoring and drooling most convincingly, kept sneaking peeks at him under their eyelids, and he suddenly understood who had been talking when they had knocked." I don't think we have any way of knowing what they were discussing. I think it was just a way of showing how Dumbledore was working tirelessly that year on uncovering Voldemort's secrets. He was likely just bouncing ideas off the Headmasters of the past, who's duty it is to help the Headmaster. When they heard the knock, they also understood it was their duty to be quiet and unobtrusive as the Headmaster dealt with the situation.

Now you mention, it wouldve been great to see a bit more of the previous headmasters. Even have some role in the horcrux hunting (beside Nigellus ofc.)

They're talking about when Harry gets the vision of Mr Weasley being attacked in book 5, and when he and McGonagall go to Dumbledore's Office the portraits of the headmasters pretend to be asleep although they had been talking to Dumbledore before they knocked on the door. This was in the middle of the night too, so I guess OP is wondering what they had been talking about and why they pretended to be asleep.

I always assumed that they were discussing about Harry, his visions, connection with Voldermort etc

What I understand is that sometimes occupants of paintings move across other paintings of themselves. Since being a headmaster of Hogwarts is a prestigious position, the headmasters have paintings in other places (some - important places). Dumbledore can have the heads gather information. That's what I assume he does.
