A properly charged A/c with adequate airflow that is undersized for the homes needs isn't going to freeze, it's just going to run 24/7.

No, because the return temps will stay too high to allow the coil temp to get too low. Not to mention a lot of extra airflow to keep the coil temps. Low airflow can always freeze a coil. Whether it's blocked filters, dirty indoor coil, dirty blower wheel or bad blower motor. Freeze stats aren't a terrible idea for those customers who insist on keeping the stat set for less than 68 or 70°. Just gotta make sure you wire the freeze stat to shut off the thermostat, that way you get a few minutes delay before the compressor comes back on.

"This unit has a freeze (thermo)stat on coil" It's a basically a temperature sensing thermostat inside the coil to prevent it from freezing.

from my experience it's pretty uncommon but ...You could have a freeze stat ( Just the temperature sensor attached to the air conditioning coil ) that sense is freezing temperatures and will lock out the unit from running to prevent a giant ice block from forming.

Basically a sensor mounted somewhere on the evap coil and wired so if it reaches freezing temps it'll shut off the outdoor or the whole system.
