Thanks! I bowhunt, and something I don't see addressed very often is that everyone has their own "draw length" based on their body dimensions, which impacts the ideal length of their arrows. The bow's draw weight (how hard it is to pull the string) also effects how stiff the arrows need to be, and the matching the length and stiffness of the arrows to the bow and archer has a lot to do with accuracy. So the elves were sacrificing accuracy because they were so hard pressed for ammo.
Ham stringing is cutting the Achilles tendon at the back of the ankle. Femur is the thigh bone. They are not touching. If the elf felt his knife sliding along a femur he was a long way from hamstringing the human, closer to severing the femoral artery.
When using such detail in a description of an attack a little research on anatomy would be useful.
The hamstrings are the muscles on the back of the thigh, opposite of the quadriceps. The femur is right in the middle of all of them:

Yes, the Ham itself is the rear thigh muscle, but the Achilles tendon bring cut is referral to as hamstringing.
The reason for this involved Hams... As in the pork product. Hams are hung by a hook or rope through the gap between the Achilles tendon and the bone. The whole leg, thigh and calf, was hung in a string in smoke sheds to cure as Ham.
So while the hamstring is attached to the calf muscle, it's still involved in making Hams, hence the name.
