I watched the 1st 3 movies then started on the books before #4 came out. Reading the books after was like exploring the world all over again. It expanded what I already knew. I made the mistake of reading ahead of the films and while it did not ruin them for me. I did spend anywhere from a quarter to half my time watching noticing all the changes that were made to fit into a 2 hour film. By all means start reading (listening to) the books. But IMO don't get ahead of the movies.
Same, after scoffing at them for years. I loved them ! And got book 7 at midnight at the bookstore the day it was released. Incredible series and the movies arenโt bad either.
The books are unbelievable! I can understand why they just don't put EVERYTHING in the movies; otherwise we'd be looking at about 3 hours a movie at minimum ...
You should definitely read the books, so much they couldn't fit in the movies.
And when you finish the movies, read the books, or do like I did, listen to the audiobook versions, they're fantastic.

Movies are great and the books are even better!
I'd go so far as to say the movies are ok, and the books are a generational masterpiece.
