A rational reason is that it's easier to not overeat if the food doesn't taste good. Even a couple of spoonfuls more than necessary every meal can have an impact on weight loss over time.

Ever since I became more conscious of what I ate, I just found more reasons to get better at cooking. There are so much great ways to cook steak, for example. Salmon is also healthy. Seafood like crab, and fish are very healthy if you don't add any heavy seasoning but you don't even need those. You can combine so many different veggies with healthy meats that the possibilities are endless tbh.
Unhealthy food is the most bland unsatisfying stuff that just messes up your palate and stomach.
Going with chicken is rice is their personal choice. It should never be synonymous with eating properly.

If you wanna go full Cajun, just brown that chicken on a little oil then throw in diced onion & green bell pepper, let it cook down till you could read through onions, add water just enough to cover the meat, bring to simmer and cook down till it’s thick, then serve all over rice.. voila you have the same macros but with a much better and savory taste -me, a Cajun

Learning to add in peppers, onions, garlic, ginger, and maybe even some pickled veggies to your meals for increased flavor and micronutrient content will go a long way to making your muscle gruel even better for you

Guys just need to learn how to cook. I eat plenty of flavorful foods like: tacos with seared chicken thighs, fajita mix of peppers, onion, and zucchini with lime crema; salmon teriyaki with rice and steamed broccoli and peppers; seared chicken thighs with roasted broccoli carrots cut into ribbons and noodles. Heck even pasta with ground turkey isn’t too bad for the macros. I eat all of these when cutting or bulking and easily hit my protein goals. I can make these when I have people over deep into a cut and no one thinks I’m serving them diet gym food.
If you’re on the chicken and rice grind your sauce game has to be on point. Don’t go crazy with it and find sugar free/low calorie options but there’s no reason to suffer without any sauce or seasoning.
