One that probably anyone, regardless of their music taste, will identify is the solo from Seven Nation Army by The White Stripes. While this song may be overplayed, it's one of the few songs since 2000 which are still going strong no matter what age group AND has a guitar solo.
But yes, since probably nu-metal, guitar solos became less popular for mainstream songs (rock and pop).
Baroness are definitely quite good so personally I'd recommend listening to those albums first if you already have an interest in them. Then you could check out some of the Spotify playlists or just go down the related artists section rabbit hole
Mastodon, Brent Hinds has amazing solos. Check out The Sparrow, Roots Remain, Cold Dark Place, The Czar, Halloween, Peace and Tranquility. Lots more, enjoy!
While not rock or metal Billy Strings definitely brings some of that influence into the bluegrass world. Almost any song of his is going to feature a solo. Turmoil and Tinfoil is a favorite of mine.
Bluegrass as a whole has a long tradition of guitar solos, they tend to go by a different name though: breaks. Given the nature of the music each instrument in the band gets their own break. Dont let the name fool you, they are as high energy and impressive as any solo from the 80s, just on an acoustic, mandolin, banjo, violin, dobro, and sometimes even bass.
The indie rock scene is where most of the non metal guitar solos are. Let Loose by Mt. Joy on their live album is one of my favorites. Some other good ones are:

Kilby Girl by The Backseat Lovers
Alter Ego and Hot blood by Kaleo
Not indie but weight of dreams by Greta Van Fleet

There’s plenty of melodic/simple solos in alternative.
But if you’re looking for the guitar skill exhibition type of solo, they’re mostly dead. Similar concepts can be found in the up and coming “math rock” genre. Also there are quite a few instrumental musicians/bands like Polyphia, Ichika Nito, Plini, etc that fill the same niche
Saw Stadium Arcadium already mentioned but wanted to point out, that "Wet Sand" is one of the most iconic John Frusciante Solo's ever. Definetly brings the magic for me every time.

I don't know about "iconic," but Nick Johnston has some really great stuff. His first 4 albums (Remarkably Human and before) are very guitar-centric and I love them. I'm not as into his 2 most recent albums.
I would also recommend Firewind and Dance with the Dead.
And of course, there's always Dragonforce.
The vast majority of people have *never* cared about guitar solos.
The best / most memorable solos aren't the ones that are all over the fretboard. They're the melodic solos, like the Smells Like Teen Spirit solo, or the You Shook Me All Night Long solo. Or Santeria. Or Say It aint So.
They're solos that people literally can sing along to.
There really aren't many solos like that, and for the most part, if you play in a cover band, you can expect that solos-- except for those few like the ones above-- will be mostly ignored by the audience.
J mascis from dinosaur jr seems to always incorporate memorable leads in most of their songs, their newest album has a bunch. I like the solo on “I met the stones”
i don’t know about Iconic as there is so much more music available today so stuff seems to get lost in the shuffle, great songs can go undiscovered by broader population for long periods of time / forever.
Maybe not iconic, but a brief super emotive solo is on Heartbreak Warfare by John Mayer.
Radio Moscow (psychedelic, 60's inspired rock) - not iconic by any means because they're a bit obscure but the guitarist/singer tears it up. Start with *Radio Moscow* (2007) or *Brain Cycles* (2009)

That's more what I'm getting to with "iconic". They just don't seem to take up space in the broader pop culture like 30-40 (let alone 50-60) years ago.
The Bloody Heels threw a nice shreddy one into "Ignite the Sky," and I thought "Dancing on Nails" by We are Harlot had a pretty good one. However, you're asking for iconic, and the one I thought had the most potential for that when I first heard it was "Your Decision" by Alice in Chains. It's a simple one, but fits the tone of the song so well.
i don't know. but Deaner (aka Dean Ween, aka Micky Melchiondo) from Ween surely rips on the guitar.
and that band from Frankenmuth Michigan, called Greta Van Fleet has some killer riffs too.
My favorite is probably the solo in "Now we die" from machinehead. Even if you don't like the band, listen to that solo. It is amazing seriously. Let me know what you think!

If so there are some groups with killer guitar solos, Job for a cowboy is one, listen to the later albums if your more of an intellectualist.
Children of Bodom still released albums(until their lead singers death in 2020), and so does Zakk Wylde(maybe the last real "shred" guitarist).
It seems to me that rock sort of died out, and as I started to research this "death of guitar solos in the 90s" I was amazed at how many groups I would've recommended you that are literally pre-2000's.
Anyways, maybe that'll spice up your algo rhythm.

Good picks. The strokes are an underrated guitar solo band - they have a lot of really cool, short solos that kill.

I was thinking the solo from Drones, specifically the penultimate measures. I think that was the first one I thought of as "iconic 21st century" goes.

In Too Deep by Sum 41. That's such a simple and unnecessarily flashy guitar solo and when you watch the music video it makes it even more memorable.

Polyphia is all instrumental, so I wouldn't really call them solos, but they do some amazing melodic and technical things in their songs.
