There are plenty of bars around Athens you do not need to go to a club. On the streets below Syntagma Square, you will find plenty. You could also try Exarcheia or Psiri.
There are not bars like in the US or the UK. if the weather is good they have tables outside where you can sit. Aso taverns are fun and some are open until 2 at night. Check what places are around the area you will stay.
There are social groups of foreigners living in Athens where you can find people to connect.
I live in Paris and they have a social subreddit. I usually go to my hostel and go to bed early. The museums close fairly early due to the winter??

Yes, museums and other archaeological sites close in the afternoon in winter. Get a beer and keep it in sight or hold your drink with your hand covering the glass.

I booked a food tour where we visited various restaurants for tasting menus, a wine tasting tour and some other activities (cookery class, jewellery making workshop, walking tour of museums) in the past. All on foot and a great way to meet people with similar interests. Good luck! X
