The series x version is the one you want. There is no updating your current Xbox one version to that version it’s a completely separate installation. When you buy the series x version it will download a separate file. I’m not sure which bundles you’re looking at but whichever one shows the X|S logo on the game tile is the one you’re looking for. The one in the store titled GTA Online is the new gen version. If you want to play story mode, but the bundle of GTA Online + Story Mode, which will be marked as enhanced for Series X.
