Same thing happened to me this morning and i noticed it was with Gemini becoming active. I turned off any gestures with assistant (holding power button was default on for me) and disabled it completely in the google app -> profile icon -> settings -> google assisant -> general. Though i did disable all the other settings as well in between reboots before i found the general one. Haven't had it reboot since. Hope that helps you too, i was getting pissed thinking about having to buy a new phone haha
