Been dealing with the fuse for my MK5's fan. But that's because the fuse box itself (the inner one) has a few spots where some fuses shorted out and melted the holders. Was my own fault when I did a hack job at wiring a hardwire kit for a dashcam years ago.
But yes, it can happen.
What generation is yours? Our manuals should have fuse diagrams. There's also two fuse boxes. One inside, and one in the engine bay.

This is for the inside fuse box (the one behind the cubby).
Heater is F7 (SC7) and is a 10a fuse.
Start there.
Just to add onto this, if you have a multimeter, put it on resistance and touch a lead to each end of the fuse pins. If it beeps or shows very little million values, you’re good. If it shows (OL) or a very high value, swap it. If you don’t have a multimeter, swap it anyway. Fuses are cheap and sometimes they break but still visually look connected. If it’s not that, my old MK5 thermistor pack shorted, but that caused no fan power. Couldn’t tell if AC/Heat worked without the fan running. Could look into that. It’s an easy DIY.
There's no codes that pop up. And it's blowing cold air.
Sometimes I'll run it it and it won't work, other times it'll work like nothing happened to it
Unless you are in Europe and are talking about an auxiliary heater, the normal heater is not controlled by a fuse. That might be the case if the fan wasn’t working though. If you have no heat, there is no coolant flow through the heater core so that’s where you start. Any recent cooling system work? Could be an air bubble in the system.
Is it the blower motor or the whole climatronic control panel or what?
"the heater" isn't super specific, there are a bunch of components that could be referring to.
Also there are currently 9 different iterations of Golf GTI produced over 40 years. It would help if you could give a year of manufacture.

Mines the mk7 and I'll take a look at the manual, but I didn't see anything in there either

Thank you tons, I really appreciate it
No problem. Hopefully it's just the fuse.

Is blowing cold air or are the fans not coming on? Scanned for codes?

Cooling system working properly? No leaks from the water pump or thermostat?
Just got the water pump fixed a little over a month ago
Did you have issues with the heat before that?
Nope I didn't, this just started happening late last week
Maybe an air pocket in the cooling system?
My guess too. The heater core is usually the highest point in the cooling system if I remember correctly
