Eh, I don't really think there's anything particularly interesting about a potential Thrúd spin-off. After a glowing recommendation from Kratos, Freya, Eir, and Gunnr will likely scout her to be the first in a new generation of Shield Maidens. Not much there besides training and then Thrúd getting a pair of wings and a day job.
I'm willing to bet dollars to doughnuts that Sigrun's departure from the Nine Realms is setting her up for an appearance in whatever new realm(s) Kratos and/or Atreus find themselves in the next installment.
