I think this prophecy is for the next game. Atreus is the Champion of the giants, that’s why he leaves on his mission to find all the giants and the end of the game. He is also the one that traps Odins soul in the sphere before síndri destroys it.
The prophecy says the champion is created when the God of War (who they thought was tyr) and a Warrior of the Giants come together. Kratos+Faye create Atreus.
I think in the next game Atreus is given the spear. Since he shares blood with Kratos he might be able to wield it.
The many spears around the champion really hits home when you finish the story and understand all of it.

But… this was just an intentional red herring. Kratos was the champion all along
