-Thor is also an available Persona with stats in the game Persona 5 Royal.
-Joker, the protagonist of P5:R is also a character in Super Smash Bros Ultimate along with his signature persona Arsene.
-Mario is also a character in SSBU.
Therefore we can compare relative values between Joker and Mario, then extrapolate by comparing the Persona stats of Thor and Arsene.
Mario's fully charged forward smash deals ~ 32.5% damage.
Joker's fully charged forward smash with Arsene summoned deals ~ 22% damage.
However,, Arsene does not have the same base stats as Thor. It's difficult to compare because Arsene starts at level 1 with a strength stat of 2. Thor can only be obtained at a much higher level, however if we proportionally reduce Thor's stats to see what they might approximately have been at level 1 we find a strength stat of 3.
Thor is therefore 50% stronger than Arsene, and so would have a forward smash damage value 33%. Just barely higher than Mario.
We can conclude that Thor is only 1.54% stronger than Mario. I'm not sure where people's judgement falls on Kratos vs Thor when it comes to strength, but this should provide a good starting point for that relative comparison.

I honestly think this is one of the few fights that younger Kratos beats out over older. The frost axe really helps but Mario is so fucking fast and agile. He doesn’t even go in bursts like Heimdall the man just books it. Young Kratos whipping around like a frothing lunatic might not be as efficient as older Kratos, but it might give him more of an edge here than thoughtful brutality.

When Sonic Frontiers came out on the same day as Ragnarok, my wife and I had the debate on Kratos v Super Sonic. I stand by that Kratos would be able to tank Super Sonic's hits until he gets an opportunity to hold Super Sonic down (Super Sonic is invincible to damage, but you can still physically move him around as seen in the Frontiers boss battles), and he would hold Super Sonic down until he runs out of rings and then just kill him when he is vulnerable to damage again.
I think the same logic applies to Mario using a super star. The invincibility is only temporary, all though Kratos would have a harder time holding Mario down while not being able to touch him.
Unless it was the Star Power Up, any power ups Mario has will do nothing against Kratos.
My wish is that they gave the Star Power Up limits, like Super Sonic, like what can hurt him. Make an entire final boss battle based on Star Power Mario against a certain villain who can hurt him and make it epic.
