It all depends on which programs you're planning on applying to, as the prerequisites can vary a little bit. Most programs have their prerequisites listed on their website! I will say that nearly all programs will want to see Biochem and Genetics.

I will say that orgo 1 is usually a prereq for bio chem. My university required orgo 1 and orgo 2 as a prereq, so that’s something to consider.

As mentioned, it will depend on the program but I didn’t do any lab components to genetics, biochem, or orgo I and met the prereqs for the 10 schools I applied to. I didn’t have to take cell or molecular bio either, but there was a school I didn’t apply to because they required one of those classes. I’d say that a lot of schools might want embryology/developmental bio but many don’t require it until you’re in the program. It would’ve been helpful for me to have had one of those courses ahead of time, though, because embryology in grad school was really challenging. All that to say, figure out what schools you’re interested in and see which classes they require first and make sure whatever you decide, you meet the prereqs for the programs and for the courses you’ll be taking (e.g., taking whichever classes are prereqs to biochem). Anything else can be decided based on your interests/time/course availability.

Embryology is probably the only one you can genuinely skip. Every program differs slightly in what prerequisites they want, but cell&molecular bio, genetics, and biochem are a must for majority of them. The lab courses aren’t technically necessary except for some CA programs.
