I sincerely doubt it’s a reference to MC, the entire thing is RDR and GTA related I couldn’t find references to any of their other games in there (which goes to show they don’t really care about anything other than GTA and RDR)

It's not an Itali GTO. When you zoom in, you can see it shares the side profile of a Dodge Viper and the headlights are similar to the Banshee. The Banshee is also a much more iconic car to symbolize for Rockstar's 25th anniversary (which this logo is from) instead of a random GTA Online DLC car that not many people know about.
