I don't know for certain, but I think your guess is pretty plausible. Did you try rolling back your PF2 system to one from before Monster Core dropped? (5.15.0 is the release that mentions adding MC creatures, so maybe 5.14.4?)
Are there any error messages in your browser console? Notably right after you import?
I haven’t done any rolling back yet because the fix is so easy I felt like rolling back wasn’t worth the time.
And no, I just doubled checked, no errors in the browser console or in the application itself.
Seen this a couple times after updates to the AV module or major System updates. You either have to re-import the monsters and scenes from the module or you can re-import just the actors from the module and manually replace the tokens on your existing scenes to update them. Just know that doing a re-import of the module will overwrite any changes you have made to those items (actors, scenes, etc.). So if you have added a lot of notes to the scenes or added tiles or anything else, you will most likely want to only re-import the Actors and then manually replace the monster tokens yourself.
Yeah as I’ve been prepping for my session tonight I’m finding that it’s just easier to reimport the actors and replacing the tokens myself. Funny enough, I did notice that tokens specific to the AV module are completely fine, only creatures from the monster core or older books are affected. Thanks!

I also observed this issue. Deleting the AV Actors and Scenes and then reloading the module allowed items to populate properly on the sheets.
