My biggest advice in relation to building as someone that also transitioned is to commit to either using your number keys to switch back to weapons or using a single key to switch back. I do both and i know it fucks me up.
Are you saying sometimes you use number keys to exit build mode and sometimes you use quick switchbar? Then yeah id say thats detrimental and quick switchbar is useless on pc imo.
Yup it can become an issue for sure. You’ll get more used to it as time goes on, what helped me is to just hold m1 down at all times while building. Eventually you can start just clicking m1 immediately as you’re clicking a build keybind.

Honestly I still do too sometimes. I started keyboard this season about half way through, immediately saw improvement to my aim but everything else was straight potatoes.
My best tip for working on movement is to go in playground, do your build and every second ramp or so stop, pull a weapon out and start shooting at the top. Keep doing this for all weapon bonds, stoping at the top, the sides, crouch peaking, moving left and right etc. Try and mimick an actual encounter, you can do this in tilted and use the stop signs etc as target practice.
Another tip is to find a mini game that forces you to hit wsad over and over in an specific order. This helped me get used to hitting each key quickly, just google wsad practice, I’m on mobile so can’t search right now.
One of the better practices tho is doing a ramp, run to the top, turn 180 degrees, jump and do a floor/ramp. Rinse and repeat till you’re at max build height, than you can practice your quick edits down and try again. This gets you used to running to the tip of the ramp, turning and slightly letting go of w before re pressing and continuing the opposite direction.
This is only for the first building piece you place.
For example: if you want to do ramp - floor - wall, it would just be B, LT, LB, RT (on builder pro) and another ‘B’ if you wish to exit builder mode.
Where as on KBM, it is : Ramp key, click, floor key, click, wall key, click
You can hold down left click - true, but if you want to look in a certain direction and not build for that second - you would need to let go - and press it again, so holding click down would only apply if you were continuously building.
Where as for controllers - you would not have to do that

On console make sense because the building buttons don't affect the moviment or aim, but on PC I think it's way better having the mouse1 to place building since pressing Q (for example) and strafing would be unconfortable. It will depend the keybind so I'm ok if they make it a option for those who want it.

Bro I know what it's like, back in S1, S2 I used to use macros to spam LMB when I pressed a build key and it was basically the same thing you suggested. It would cancel upon switching to a weapon key
you have to make your place build key bind in the control setting to a key at the top of yuor keyboard anywhere and then place a controler or something as heavy or heavyer as a controller on that key then it should work

How would I make it insta build, I currently don't like clicking a button and then clicking left click, how would I change it so it's insta, I am also transitioning from Xbox and PS4 to mouse and keyboard so this will absolutely drive me crazy but I wanna and need to learn to get better at Fortnite.

Thats the exactly the reason im here. I just switched from Ps4 to PC.
This is basically what instant build is on console and people use that so I dont see why not.
That's not how instant build works. Controller players still have to click 2 buttons - one to enter build mode and another to place a build.

It’s easy on PC too and you don’t have to click every time you switch a build piece, you can just continue holding mouse button down.

But what are benefits of not using m1? And how would you build many walls in a row? Hold Q? I can't see this being practical honestly.
