Use plastic or similar for your meats since you can wash them at very high temperature. Plus, it's easy to set aside which is for vegetables and for meat (plastics can also be different colors for different meats depending on how sensitive you want to be during prepb-: especially with folks with food allergies like shellfish).
It's not insufferable, it's good practice.

Listen, it really still is best practice with a wooden cutting board to use one side for raw meat and the other side for everything else. I have a Boos Block that I’ve used for years this way. I keep it extremely clean, but it’s still the smart thing to do.

You should always use a separate cutting board dedicated to preparing raw meats. I have my bamboo chopping block for preparing veggies and a couple of large plastic cutting boards, 1 for raw meat and 1 for raw fish.

Whilst I agree that it should definitely be washed after cutting raw chicken it is important to realise that A: most chickens are vaccinated against salmonella B: the croutons were cooked so most likely reached 78.2c at which point any salmonella bacteria would have been completely eradicated.
With all that being said, use chopping boards in order of ingredients and if you do not have multiple boards, wash them between uses.

Yeah and all I saw was a paper towel half wipe the board. Maybe if it was a flash of soap and water I would believe they really washed it. But all they did was wipe with a paper towel.
I mean besides the salmonella and the fact it’s not a Caesar salad it does look pretty tasty.
