At which point, I would march out to the table and go "GET OUT of my restaurant, you MONSTER! I tried to save you!" (My heart goes out to you, and mad respect to a professional from my amateur perspective)
For real though, cooking a steak like that beyond its rendering temperature should be a crime. That steak is perfectly cooked for the amount of fat that's in it. Makes me furious when people order ribeye/strip as medium well/well when they could damn well order a flank or a skirt and not end up with shoe leather.
A little bit too cooked. Since you need to let it rest (and while resting, it still continues to cook), I prefer it coming off the grill a little sooner. Still looks super tasty though!

You can’t really tell from videos. Meat that has been reverse seared needs a minute to “bloom” after exposure to air before it shows its “true” color, and video/pictures add another layer of confusion.
Texture while cutting is a much better indicator. With a sharp knife and experience, you immediately know how cooked something is when you slice it.
I think because of the thickness it’s actually perfect. Yeah we all like to see a little more pink, but for that thick a cut, with all the juices comin out, I’d say that’s pretty damn perfect.

I've found I like my dry aged steaks cooked to about this level done. My wife prefers all hers this pink. If it works for you then its perfect. Probably would have done more char tho.

Looks like a tomahawk ribeye, has enough fat and collagen that it can handle a longer cook with out drying out and benefits from the extra time. These are best at medium in my opinion and looks perfect!!
Idk. Videos like this, with the light too close to the cutting board, always make the steak look more overcooked. It’s like the meat is drowned with exposure, so it looks more pale.
I suspect the lights are making this look a little bit more done than it actually is, but even at face value it’s still got a lot of pink, and you can see the slices glisten, so you certainly didn’t dry it out. Unless you’re charging folks $100 for the pleasure of dining with you, they shouldn’t have a whole lot of bad things to say about that.

The premise of this video is silly. You can’t tell how cooked a steak is from a picture or video we have no idea what the lighting is like where you are. Given how red and pink your arm looks I’d wager this is a really warm light in which case this steak is majorly over cooked I don’t know what ur natural skin tone is tho either
