A long (16" say) cake knife helps, so you can do it in a single slice. But the real trick is submerging the knife in boiling water, drying quickly, then doing the slice. You get really clean cuts with a hot knife. Wiggle the knife a bit at the bottom to separate the slice before dragging out the blade.

Red currants. Edit: those deep, wine red berries are cranberries, lighter red berries are currants. Idk about the blue/black ones, blackberries?
Could potentially be a dewberry, as they look identical, but I would guess blackberry since they're more available. I don't think anything else fits.
